Venison Summer Sausage
5 lbs Ground Beef or Venison
5 tsp. Curing Salt heaping Mortens Tender Quick
1 Tbl Course Groung Black Pepper
2 Tbl Whole Mustard Seeds
15 drops of liquid smoke
1 Tbl Garlic Powder
Mix this all together and refrig for 24 hours.
Mix again and refrig for another 24 hours, take out
and roll in to logs 2in in diameter and place on
broiling rack and bake for 8 hours at 150-170, turning every hour.
This is really good we make it all the time.
