Very Cranberry Muffins
1 cup quick cooking oats
3/4 cup skim milk
1 1/2 cups whole wheat flour
1 tablespoon baking powder
1/4 cup sugar
1 cup whole berry cranberry sauce
2 egg whites
1 tsp. vanilla extract
1/4 cup chopped walnuts (optional)
Combine oats and milk, and set aside for 15 minutes.
Combine the flour, baking powder, and sugar, and stir to mix well. Add the oat mixture and the remaining ingredients, and stir just until the dry ingredients are moistened.
Coat muffing cups with nonstick cooking spray, and fill 3/4 full with the batter. Bake at 350 for about 18 minutes, or just until a wooden toothpick inserted in the center of a muffin comes out clean.
Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
