This recipe came from my maternal grandmother.
RHUBARB CRUMBLE
FOR THE CRUMBLE:
2 1/4 cups washed & trimmed fresh rhubarb, cut into one-inch chunks
3 Tablespoons sugar
1/8 teaspoon cinnamon
1/2 cup light Karo syrup
1 Tablespoon butter or margarine
FOR THE TOPPING:
1/3 cup flour
few grains salt
1/8 teaspoon soda
1/2 cup oats
3 Tablespoons sugar
2 Tablespoons butter or margarine
TO MAKE CRUMBLE:
Preheat oven to 375 degrees F.
Arrange rhubarb in a shallow greased 9-inch glass pie dish. Mix sugar and cinnamon and sprinkle over rhubarb. Pour syrup over top. Dot with butter. Reserve while you make the topping.
TO MAKE TOPPING:
Sift flour, salt and soda together. Mix oatmeal and sugar with flour mixture. Blend melted butter into dry ingredients until crumbly. Sprinkle topping over rhubarb.
Bake for 35 to 45 minutes. Top with whipped cream to serve.
