WEIGHT WATCHERS APPLE CRUMB MUFFINS
FOR THE BATTER:
2 cups all-purpose flour
1/4 cup. granulated sugar
1 tbsp double-acting baking powder
1 tsp apple pie spice
1 cup. skim milk
1 small golden delicious apple, cored
1/4 cup. margarine, melted
1 egg
FOR THE CRUMB TOPPING:
1/4 cup. all-purpose flour
2 tbsp granulated sugar
1 tsp. granulated sugar
2 tbsp margarine, melted
1/8 tsp. ground cinnamon
Preheat oven to 400 degrees F. Line twelve 2 1/2-inch-diameter muffin pan cups with paper baking cups and set aside.
TO PREPARE THE BATTER:
In mixing bowl combine first 4 ingredients.
In 2-cup measure or bowl combine milk, apple, 1/4 cup margarine, and egg; pour into dry ingredients and stir until combined (do not beat or overmix; batter should be lumpy). Fill each baking cup with an equal amount of batter (each will be about 2/3 full).
TO PREPARE TOPPING AND BAKE:
In small bowl combine all ingredients for topping, stirring until thoroughly combined; sprinkle an equal amount of topping over each muffin.
Bake for 15 to 20 minutes (until muffins are golden brown and a toothpick, inserted in center, comes out dry). Remove muffins to wire rack and let cool.
Makes 12 Servings, 1 muffin each
Each serving provides: 1 Bread Exchange; 1 1/2 Fat Exchanges; 50 calories Optional Exchanges.
Per Serving (excluding unknown items): 180 Calories; 6g Fat (31.5% calories from fat); 4g Protein; 27g Carb ; 1g Dietary Fiber; 16 mg Chol ; 205mg Sod. Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1 Fat; 1/2 Other carbo.
