Recipe: Denver Brunch Bake (using biscuit mix, freeze-ahead) (1988)
Breakfast and BrunchDENVER BRUNCH BAKE
2 eggs
2 cups Bisquick baking mix
1 1/2 cups chopped fully cooked smoked ham
3/4 cup shredded Cheddar cheese (3 ounces)
1/2 cup chopped onion
1/3 cup chopped green bell pepper
1/3 cup milk
2 tablespoons vegetable oil
3/4 cup shredded Cheddar cheese (3 ounces)
Heat oven to 375 degrees F.
Grease square pan, 9x9x2 inches.
Beat eggs slightly; Stir in remaining ingredients except 3/4 cup cheese. Spread evenly in pan.
Bake uncovered until top is light brown, 25 to 30 minutes. Sprinkle with remaining cheese. Bake just until cheese is melted, 1 to 2 minutes longer.
TO FREEZE:
Wrap individual servings (1/6 of recipe) in aluminum foil or plastic wrap, or place in airtight plastic bags.
MICROWAVE REHEAT GUIDELINES:
Unwrap frozen servings and place on microwavable plate. Cover loosely with plastic wrap; microwave on medium-high (70%): 1 serving 2 1/2 to 3 minutes, 2 servings 4 1/2 to 5 1/2 minutes, 4 servings 7 3/4 to 9 1/4 minutes. Let stand 2 minutes on heatproof surface.
High Altitude Directions (3500 to 6500 feet):
Heat oven to 400 degrees F. Bake 23 to 28 minutes. Microwave reheat times may be slightly longer.
