Recipe: What the server said: Bandera Cole Slaw

A salad dressing/vinagarette of roasted peanuts (not sesame), ginger, lemon and rice vinegar (very light on the lemon and rice vinegar). It was also obvious to me a little sugar was added (maybe more than a little)
After careful dissection on my plate I saw there was
regular green cabbage
small amount of purple cabbage
green onions
parsley
roasted whole peanuts that ended up being split in two
and I think a little jicama for more crunch (julienned)
Another important key is that all vegetables are very fresh and procured from organic specialty farmers local to the area.
My guess is that the oil is infused with peanuts by either soaking roasted peanuts for a long time or gently frying roasted peanuts in oil. Most likely canola since canola is relatively tasteless. I may try a very strong specialty peanut oil available at some markets but not the ordinary stuff (Planters) in the supermarkets.
Anyways I am going to try all kinds of variations and see what happens
