Recipe: White Bean and Tuna Salad

WHITE BEAN AND TUNA SALAD

1 (15 ounces) can cannelini beans, rinsed and drained
1 (6 ounces) can albacore tuna packed in water, drained
1 1/3 cups thinly sliced radishes
1/2 cup chopped green onions
FOR THE DRESSING:
3 tablespoons lemon juice
2 tablespoons vegetable oil
1 teaspoon sugar
1/4 teaspoon freshly ground black pepper
4 cups mixed salad greens (to serve)

In large bowl, combine beans, tuna, radishes and onions.

In small bowl, combine lemon juice, oil, sugar and pepper; mix well. Pour over bean mixture; toss to mix. Cover; refrigerate 1 hour to blend flavors.

Serve on bed of greens.

Servings: 4
