Recipe: Chocolate Meringue Cookies (not Publix)

Chocolate Meringue Cookie Recipe

These chocolate meringue cookies are made with egg whites, semisweet chocolate, a little sugar, and chopped pecans and vanilla.

2 egg whites
dash salt
1/2 teaspoon vinegar
1/2 teaspoon vanilla
1/2 cup sugar
6 ounces semisweet chocolate or chocolate chips, melted and cooled
3/4 cup chopped pecans

Beat egg whites with the salt, vinegar and vanilla until soft peaks form. Gradually add sugar, beating until stiff peaks form. Fold in melted chocolate and chopped pecans. Drop by teaspoonfuls onto greased baking sheets.

Bake at 350 for about 10 minutes.

Makes about 3 dozen chocolate meringue cookies.
