ZESTY PEACH SALSA
2 ripe medium peaches (about 3/4 pound), peeled and chopped
2 ripe medium tomatoes (about 3/4 pound), chopped
1 small fennel bulb (about 3/4 pound), cored, and chopped
1/3 cup finely chopped red onion
3 T. olive oil
1 T. fresh lemon juice
1/2 tsp. fennel seeds, crushed
1/2 tsp. salt
1/8 tsp. grated red pepper (cayenne)
In medium bowl, stir all ingredients. Cover and refrigerate if not serving right away. Makes about 3 1/2 cups.
