Recipe(tried): Zucchini Bread

Breads - Assorted

2/3 C. Shortening
2 2/3 C. Sugar
Cream together until light & add the following :
4 Eggs
3 C. shredded Zucchini
2/3 C. Water
Mix together the following and add to the above
2 Tsp. Vanilla
1 Tsp. Ground Cloves
Mix the following together in a separate bowl and then gradually add to the above mixture:
3 1/3 Flour(I always use unbleached)
2 Tsp. Baking soda
1 1/2 Tsp. Salt
1/2 Tsp. Baking powder
1 tsp. Ground cinnamon
Dust 2/3 C. Raisins with flour to keep them separate & suspended in batter. Add to batter along with 2/3 C. coarsely chopped nuts(Iuse a mix of walnuts & Pecans) Bake @ 350 60-70 min in 9x5x3 loaf pans with parchment lined or greased bottoms.
