ISO: amount of food to prepare/purchase for grad party

We will be having a taco bar at my daughter's graduation open house. This party will be for my daughter and one of her friends. I'm assuming there will be 200-250 guests. I have NO idea how much food to purchase or prepare. I'm getting almost everything at Sam's CLub and have things priced...just need to figure out quantity. I need help with how much to purchase of the following items: ground beef, shredded lettuce, and shredded cheese. (I think I can figure out the rest.) Any help would be GREATLY appreciated! The party is May 28th.
