ISO: Apricot and peach desserts using canned fruit

Hi All!!
I'm currently in Idaho visiting and playing Horsie Midwife... we had a colt! But now I need my good buddies to help me out with some ideas for desserts to use up a bunch of Apricots and peaches (canned)
Pies? desserts of any kind, I'd love ideas! I have limited resourses and even fewer kitchen gadgets (visiting a bachelor...LOL)
