ISO: Cooking for colitis

My husband has colitis and a symptom that he experiences is that if he eats, it helps relieve the bloated feeling and stomach pains that accompany this disease. Side effect however is the weight gain. Has anyone else dealt with this problem and if so are there some tips on healthy snacks that still taste good?
