ISO: Graduation Party

My daughters graduation party is this weekend, and I am planning on having sandwiches. I was thinking of making roast beef, but not sure how to do that in a large white roaster pan. Also was thinking of maybe putting on the rub listed earlier. Or maybe I should just stick with ham. Any ideas ladies?
