ISO: Judy - Could you post those two pie recipes?

When we got the Spies, it would be a bushel of them, and I'd spend the weekend making pies for the freezer! Those were the good old days when the kids and grandkids were always at the house. Now that we're in FL, I don't cook the way I used to, but I sure miss those Spies. They were the perfect pie apple.

Would you mind posting the two recipes you mentioned? And sometime, try the Minute Tapioca -
