ISO: Lima, Peru Pollo al la brasa (Pardos Chicken etc)
Misc.Hello, I have been to Lima Peru now twice and I just love the rotisserie chicken that you can get everywhere. I saw where someone else liked an aji sauce and got help and I too have a need. :) My favorite place to eat (on several occasions) was Pardos Chicken. Thay have a yellow sauce they bring you for the papa fritas and chicken. Looks yellowish with very small peices of something green and orange and was not real spicy but not too bland. No one there seemed to know how to make it and the waitreses sure wouldnt helpme. :( I love this so much, I would really like to be able to make something as similiar at home as I can. Here are what I have been told is possible in it. Can someone please tell me if this is correct, or all there is to it or if there is more what else and in what proportions there are??? Thank you so much:
