ISO: OK guys, thinking caps on!

My husband & his friends are reshingling the house this week. We want to have a thank-you dinner when they are done and everyone can schedule a night to join us for dinner with their significant others. I plan on making cutout sugar cookies in the shape of houses (with gray shingles), both to share after the meal & for everyone to take home. Other than that I wonder if anyone has some tried and true menu ideas for a spring dinner that will really express our thanks to our friends for going to such lengths (and heights!) to help. Everyone always requests my frosted sugar cookies, so they are a must, but I want the rest of the meal to be pretty over-th-top. There will be 3 other couples besides us. Any ideas for complete Spring menus? (PS, I'm really hungry for lamb, but my husband is not fond of it, otherwise I'd be making Jeanne's Spoon Lamb!)
