I'd do lamb myself, but...

Hi Micha,

I'd do lamb, myself... that says "spring" to me... but if your husband doesn't like it, how about veal? Or a dish substituting veal, beef, or pork for lamb?

Other spring-like foods are asparagus, artichokes, and of course strawberries for dessert.

I have several recipes combining veal and artichokes (one is a saute, the other a stew). Let me know if you want me to post them.
