ISO: Polish sausage

We are in Hilton Head, SC, trying to get Polish Sausage for Easter. We must resort to buying Breakfast Sausage and adding the seasonings because no one grinds pork in the grocery stores. I will use the recipes found here in an attempt to turn breakfast sausage into Polish sausage. We will make patties, since I do not think I can "restuff" the casings Thanks to LaDonna and Tom in Milwaukee for recipes.
