ISO: "Smothered" Fried Chicken Recipe
Misc.My Mother passed away quite a few years back when I was too young to pay much
attention to what she was doing in the kitchen - other than that wonderful
things came out! She was renown for her Fried Chicken but I can't for the life
of me remember exactly how it all came together and I'm hoping someone else
can! Here's what I do remember - she floured and browned the chicken in Crisco
(had to be white Crisco) on top of the stove, then put it in the oven. I don't
remember if it was covered or not. At some point in the baking process, she
poured whole cream over it and baked it some more (covered or not?). This
chicken was like Heaven! It had a coating but wasn't crunchy and the gravy
that came off of it was the best in the world! I even have the "famous"
chicken cooker cast iron pan that she used, but very little beyond that. I
have been searching cookbooks for years and have never came up with anything
that was even close to what my Mom made. Is there anyone out there that knows
what she did? Thank you in advance if you can help me out with this one!
