Recipe: Elizabeth - "smothered" fried chicken

recipes. Here are 2 - I hope one of them is close. One is from
the 1950 Betty Crocker ckbk - might be the closest one.

Smothered Chicken

Wash, dry well & flour pieces by shaking several at a time in a
paper bag containing:
1 C Gold Medal flour
2 tsp salt
1/4 tsp pepper
1/2 tsp celery salt
1 tsp paprika (if desired)

Place chicken pieces (in heavy deep skillet) in 1/2 in. hot fat
(part butter) skin side down. Brown on both sides. Add 3 T.water.
Cover; cook over low heat on top of stove or bake in a preheated
oven (325 deg) until tender (45 to 60 min). For smothered chicken,
use the baking method & sprinkle the remaining seasoned flour
over chicken. Pour over the browned chicken 2 C hot sweet or
sour cream. Add more cream, if necessary, to half cover.

Note: Remove from oven as soon as tender. Cream will be less
likely to separate.

Fried Chicken with Herbs

1 C onion, chopped or sliced
3/4 C celery, sliced
3 lbs chicken, cut up
Butter or margarine
3 T flour
1 1/2 tsp salt
1/4 tsp sage
1/4 tsp thyme
1 1/2 C milk

Saute onions & celery in butter until golden brown. Remove to
casserole. Brown chicken pieces & arrange over onions & celery
in casserole.

Add 3 T flour, 1 1/2 tsp salt, 1/4 tsp sage, 1/4 tso thyme to
fat in pan, stirring. Add milk, stirring until thickened; pour
over chicken. Bake in 325 deg oven for 30 min, covered & then
an additional 30 minutes uncovered.

My mom always used Crisco solid shortening also.
