ISO: Uncle Julio's shredded chicken recipe desired

Uncle Julio's Mexican restaurant chain make the most delicious shredded (pulled) chicken for their recipes. When I lived in Dallas four yrs ago, I coaxed a waiter into revealing the recipe included lots of butter and marinating. Unfortunately, I moved to rural Minnesota, land of Scandinavians, and good Mexican food is hard to come by. Anyone have Uncle Julio's recipe or able to ask waiters for more ingredients?
