ISO: Yahooz 3 cheese potatoes

I'm looking for the recipe for the scalloped potatoes served at Yahooz, I believe the server told me there were three cheeses and he did say one of them was pepper jack. I've come up with my own version but I can never get the cheese to stick to the potatoes- otherwise they are pretty good- any ideas on getting the cheese to absorb better or a copycat recipe?
