I will add this to my file for substitutions. There are some new ideas I had not read about. I am going to try some recipes without eggs, like the cookie ones. How interesting. Well, you were so close to seeing my little town! What university are you at?

About rinsing my meat: I swear I can't tell the difference when it is used in a sauce. Most ground meat is used in some kind of sauce. Well, we shall speak againn soon!
