The plantains are from the family of the bananas. Green plantains are not sweet (savory) & they adopt the flavor of whatever they are mixed with. The tostones are similar to a crispy cookie (crispy in the outside & soft in the inside, but not sweet, they will enhance the taste of olive oil, garlic, salt & chopped cilantro in the Mojito) but they are great to accompany food and as a tasty garnish. In Puerto Rico, using a more complicated process, we serve them stuffed with stewed lobster, or shrimps, or chicken or beef as elegant appetizers. (like stuffed tortillas)

Sweet plantains are one of the most elegant versatile desserts. Like the bananas they are sweet & they can be prepared fried or baked with sugar, cinnamon, butter & rum (for a flambeau elegant dessert) or fried as a sweet accompaniment to rice & beans or Picadillo & white rice.
