Just to be sure we are talking about the same ingredient, I should say--pectin is not the same thing as gelatine. That may be why the Knox company didn't have a file on the subject. Pectin is derived from fruit, usually apples, and is what is used to gel jams, jellies, and preserves. Look for it in stores near the canning supplies under the names of Sure-Jel, Mrs. Wages, Ball, and (I think) Smuckers.
