About A Top Crust To This Pie!

Hi Colleen;
I'm so happy to find some TKL friends trying this recipe out and realizing how good it is. The best part of it, it's so so easy!
To put a top crust on the pie, I can honestly tell you I dont know how you would do it. If you would put a raw piece of pie dough on top of a cooked pie, then put it in the oven....I think you might face disaster in the top crust shrinking and the filling getting hot again and then liquifying, and also...burning the edges of the original bottom crust. I'm sure there is a way to do this, but not without a lot of experimenting. I just dont want to tell you how to do something I dont know how to do myself. Hmmm. I'll talk with the pastry chef at work and we shall see what we might come up with.
In the meantime, enjoy this wonderful pie for what it is. Good, simple, quick, and easy.
