Fondue New Years Eve Party

I was introduced to Fondue a couple of years ago and we love to entertain this way. I am having 7 adults and 2 children for New Years Eve for Fondue. This is what I am doing. People are arriving @ 6pm, no one is driving home, all over night guests, so drinks are starting at 7pm, homemade khaula and milk or eggnog. We will start with a cheese fondue, an oil fondue (use a light oil peanut is excellent but if nut allergies are an issue, as I have found out the hard way, you can use sunflower or canola, and a chinese broth fondue (2 cans chicken broth, 2 cups water, fresh ginger root(peeled and sliced 3 to 5 slices), garlic cloves (to taste), and green onions (4- 2 inch long peices). Because there will be 9 of us I have borrowed a few pots so there will be 2 of each kind on the table. We have two settings, one at 7:30 pm, usually 60 to 90 mins of fonduing and chatting. We fondue chicken, steak, pork, broccli, cauliflower, peppers, snow peas, crusty french bread, persian potates (precooked), mushrooms. I have presently a list of 7 sauces to chose from, I use to make my own ,but there are so many excellent sauces on the market I gave that up. I am going with an ethnic theme so will have Hoisin sauce, sweet and sour plum, peanut ginger sauce, honey garlic, than a few favorites, cheese (the kids love Campbell's cheese soup for the brocolli, BBQ sauce, greek tzakiti (sp off), and melted garlic butter. Than we will take a break, sociallize, play some games (darts/cards, maybe even dancing) and than set the kids up with the sony play station and a movie, so we can, contiue with out hunger kids. The second setting will be around 10:30pm, this setting will include all the previous Fondues and ingredients with the addition of seafood, shrimp and scallops as they are more expensive I have them at the second setting as people are less likely to eat as much and some people tend to perfer their seafood and meat courses seperately. This course usually only lasts 45 to 60 mins, just in time to get a fresh drink and get the champange ready for midnight. After midnight when the kissing slows down and the songs are sung I than will set out a chocolate fondue(must use a ceramic pot and sm candle/tea light, on the bar to be enjoyed at everyone's leisure for the rest of the night. I use only firm fruit, bananas, strawberries and pineapple, are the most popular, and pound cake, cut using star cookie cutters, the kids have their own pot for this course. I do hope this helps anyone who wants to throw a Fondue party. They are wonderful and our friends all remember these parties more than any others we have had.
