Hoot...

Misc.

If you got the little recipe book that came with the kitchen Aid mixer, check out the cream puff recipe and filling. It is excellent and very easy. I like to make small cream puffs rather than the big ones. Small ones are easier to eat. I make about twenty-four rather than the twelve they suggest. I would recommend making a double recipe for the filling if you do that. It gets a little stingy filling 24 smallish cream puffs with just one recipe. Don't fill the puff too far ahead of time--the puffs get soggy by the next day. When I serve them, I dust them with sifted powdered sugar and pile them on a platter or cake stand. If you have some small fresh flowers, you can decorate the plate with them. If you did not get those recipes with the mixer, post a note on this board and I will type up the recipes for you.
