I'm having a lucheon ...

Hi!
I'm hosting a salad luncheon a week from Sunday. My hubby is having business guest in and this is for them mostly although the local men will bring their wives. No biggy though I though with church and limited eating time large fresh salads would be good. I have not yet even planned them all -- need inspiration!! I plan on 15 people total and just know that i'll go overboard and have too much!!

I'm going to have a pasta salad, chicken and spiniach (i've posted that one need to find again) 7 layer and a sumi salad seeeeee what i mean tooo much! but i wan tit to be a nice spread ... not buffett style either, sit down ... I'll probably do home-made bread as well.

These men are going to be here for 5 days (staying at hotel) and being that my hubbys work is a seminary they never really have a lot of funds to work with so i offered to do meals for them. I thought this might stave off large resturant bills. Mostly I'll do them on campus. By the way i figure it would have been oh min $20/day for EACH of the 5 men plus 2 bigger dinners .... we are talking approx $550. minimum for resturant -- my plan and a nice one will be about $200!! I won't need to do breakfast as we put them in a nice hotel with continental and they will have large lunches! Pat me on the back will ya!! :)

One of the lunches will be chicken salad on a croisant, you might want to concider this. COSTCO has the BEST Croisants!! I'm buying the chicken salad at a nearby deli, plan to place a cut croisant, ice cream scoop of salad, leaf of lettuce, tomato slice & pickle on a disposable divided plate, cover and fridge so hubby can serve while I'm at work.

Any thoughts on the above??
