I was looking for a recipe for Craisin bread on the internet and came across this one. It was posted by a sister at a catholic monastery.
I made the bread yesterday and we had it toasted for breakfast this morning. We thought it was really good, and it is soooo easy.
CRAISIN ENGLISH MUFFIN BREAD
cornmeal (for dusting pans and sprinkling on top)
6 cups flour, divided use
2 envelopes active dry yeast
1 Tbsp. sugar
2 tsp. salt
1/4 tsp. baking soda.
2 cups milk
1/2 cup water
1 to 2 cups craisins (dried cranberries) or raisins (I used a seven ounce package of craisins)
Prepare 2 loaf pans with cooking oil spray and dust with corn meal.
In a mixing bowl, put 3 cups flour, yeast, sugar, salt and baking soda.
Heat 2 cups of milk and 1/2 cup of water to between 105 and 115 degrees F. (I did this in the microwave for a few minutes and kept checking with an instant read thermometer)
Stir the heated milk and water into the flour mixture. Stir in the remaining 3 cups flour. At this point you can add craisins or raisins (I used a seven ounce package of craisins).
Spoon into prepared pans. Sprinkle tops lightly with a bit of corn meal. Cover and let rise in a warm, draft free place for 45 minutes or until doubled. (I put a two cup measure of water in the microwave and heated it for four minutes, removed it and put the pans in the microwave to rise)
Heat oven to 400 degrees F (I used Pyrex pans and 375 degrees F).
Bake 25 to 30 minutes until golden. Cool in pans on wire rack for 5 minutes. Loosen edges with a thin knife, remove from pans and cool completely. Then ENJOY.
