it is something like a Galette (not Gatteau)that is one of the most delicate potatoes dishes from French Cuisine. Oh, I guess I am a coward because I am afraid of trying it because it is quite difficult. That is the reason why you call them Potatoes Elegante. Quite challenging dear friend. In one of these inspired days I will try your Potatoes Elegantes.
