Recipe: Spinach Rice (using brown rice and frozen spinach)

SPINACH RICE

"A great side dish for chicken or fish."

2 packages (10 ounces each) chopped frozen spinach
2 tablespoons butter
3/4 cup chopped onions
1/2 cup finely chopped celery
1 cup brown rice, uncooked
2 cups water
2 cups chicken broth
1 teaspoon salt, or to taste
1/4 teaspoon Tone's Fine Ground Black Pepper
1/8 teaspoon Spice Islands Ground Nutmeg
1/2 teaspoon Spice Islands Dill Weed

Thaw spinach; drain very well. Set aside.

Melt butter in a 2-quart saucepan with a tight-fitting lid. Saute onions in butter until golden. Add celery and rice and saute until rice is lightly browned.

Stir in chicken broth, 2 cups water, salt, pepper and nutmeg. Add drained spinach. Bring mixture to boil; cover and simmer 45 minutes until all liquid has been absorbed. Stir in dill weed.

Makes 8 servings
