Recipe: Devonshire Corn

Devonshire Corn

Serves 6

4-5 cups fresh corn removed from cobs
1 cup whipping cream
1 cup milk
1 tsp. salt
pinch of nutmeg
6 tsp. sugar
pinch of cayenne pepper
pinch of white pepper

Beurre Marie
2 Tbsp very soft unsalted butter
2 Tbsp flour

Combine corn, cream, milk and seasonings in a saucepan and bring to a boil. Reduce heat and simmer 5-7 minutes uncovered. Blend the butter and flour together. Gradually drop small pieces into corn mixture mixing well and cook 2 minutes to thicken.
