Mexican Soup For Bg/Chicago
Misc.Hi BG:-) I posted this recipe above. I bet that it is as cold in Chicago as it is here, or maybe colder. This would hit the spot on a cold Chicago night. I think you could skip the sauteeing part and just add the onion, celery, garlic, chili powder, and cumin directly into this soup. Just let them simmer a bit longer until they are a bit soft, before finishing the recipe. You can use rotisserie chicken from the grocery store, and steam or heat the tortillas in your microwave as I did.
I think this recipe would work great in your crockpot. All of the flavors would have time to "marry".
