Mom's Scalloped Potatoes (variation)

 My mom also did the layering of the potatoes but added a THIN layer of thinly 
sliced onion on each layer of potato. She also dotted each layer with butter 
in addition to the salt, pepper, and flour. We usually had scalloped potatoes 
with baked ham, and mom would cut a layer of fat from the outside of the ham 
and lay on top of the potatoes for seasoning as they baked and then removed it 
before serving. IT WAS WONDERFUL. Of course, that was 30 + years ago...before 
we knew much about cholesterol and saturated fats. I don't do that anymore.
