If they are boiled, they are thrown in the pot live. The tails are pulled off and peeled to eat. Many people do suck the heads to get the fat and juices where a lot of the flavor is. Come to the Lafayette, La. area in the spring and you can get boiled crawfish in most restruants. Other dishes can be gotten just about year round at most places, because frozen crawfish are use.

These are one of my favorite seafoods, and I look forward to the spring when they can be gotten live to boil. But, I eat them year round fixed in other ways.
