I do the same nice to have on hand right??

> tip for next time -- I ask the butcher to cut for me at mieyrs and they are happy to oblige. I have them take 1/2 and tie with rope as a roast 1/2 of top halve as is and rest of top half as thick chops ... goes a long way .... top bottom matters not by the way.

Anyway ...
Pork carnitas are always a hit here. take your roast and put in crock pot with a lot of lemon juice (3/4 cup or more) let go all day. High low matters not. frozen? okay too. just put it on in the am and eat in the pm ... love this kind of cooking ....

before serving time take and fish out (it will kind of shred) the amount you will need for dinner and put it in a fry pan with yet more lemon juice or fresh lime juice if you have them and turn heat high enough for it to ... a) finish cooking if it is not yet ... b) to kind of sizzile up. the lemon or lime helps to "cut the fat"

now serve with various types of things like:
chopped onions, cilantro, avacado, shreded cheese, chopped roma tomatoes, salsa and sour cream, fresh lime wedges, maybe even a can of refired beans, whatever not usually lettuce as these are not tacos (although...)

of course serve with flour or soft corn totilla's almost forgot -- large taco sice are great ....

let each do his/her own ENJOY! good served with safforn rice (i use pkg of Mahatma) or spanish rice.

Now the next recipe is for any leftovers you may have ....

the next day go totally different and mix leftover meat in with BBQ sauce and a little water and serve on buns for pork BBQ'S
