Recipe(tried): Maple-Mustard Pork Tenderloin w/carmelized Apples (an additional idea at the end)

Main Dishes - Pork, Ham

This is a delicious recipe that even my kids love! I don't use as much mustard as it calls for because we don't like a strong mustard taste, but believe me, this recipe is worth trying!

Ingredients:
(2) lb pork tenderloins
cup Dijon mustard(sometimes I use deli mustard, but it doesn't take very much)
6 T maple syrup
1 t dried rosemary or 1 T fresh
t salt
t pepper
4 med granny smith apples, peeled and wedged (I use the canned sliced apples--not the pie filling but found in the same section)

Method:
Preheat oven to 425. Trim fat from pork. Place pork on greased broiler pan. Combine mustard, 2 T syrup, rosemary, salt, & pepper; brush over pork. Insert meat thermometer into thickest part of pork. Bake at 425 for 25 min or until thermometer registers 160 (slightly pink). I don't usually use a meat thermometer; I just check to see that it isn't really pink.
While pork is baking, saute' apples 5 min or until slightly browned. I use 2-3 T butter and sprinkle cinnamon on top of the apples. Reduce heat to low and add 4 T maple syrup (add more if you like because the syrup is really good with the meat). Simmer 10 min or until apples are tender. Cut pork crosswise into slices. Spoon cooked apples over pork.
If I'm looking for easy side dishes, Stove Top,green beans with a green salad and french bread complement it nicely. I use the cooked apples for side dishes for alot of meals. They are delicious and the kids love them!

Here's another way to cook the tenderloins: sprinkle BBQ seasoned salt over the loin, cover with foil, and cook at same temp for same amount of time. Good with baked potato and salad with fresh homemade bread.
