I've started cooking all my pork loin roasts like this and everyone loves them.
Season with your favorite seasonings. I like rosemary and garlic, but it's up to you. Preheat your oven to 500 (yes 500) degrees. Insert a meat thermometer. This is vital!!! Cook until thermometer reads 140 degrees. Remove immediately from oven and let rest for about 10 minutes. You'll be amazed how juicy and tender this roast is. Good luck
