Hi Jennifer, I do the same thing with buying meats. Here are a couple of ideas on what to use it for and it helps not to have to use the oven in this heat!

Crock Pot:
I cook the roast (this can be done with beef also) in the crockpot until done.
I serve the roast the first night with either potatoes and carrots, or sometimes with rice and vegetable of my choice.

Burritos:
I take the remainder of the roast and shred it and add it to cooked rice, quantity is up to you, and add a 4 ox. can of Ortega Green Chiles (they are very mild, but flavorful). I think heat it up together in a skillet. I heat up flour tortillas in the microwave and then fill them with the roast and rice mixture.

These are a big hit with my family! Hope this helps you.
