Hi Tim,

That's a very good question. Usually when a recipe calls for shallots they mean the whole shallot which may or may not have clove-like sections. If a recipe doesn't specify a size for the shallot I would use a medium one (but more or less to taste usually won't be a problem). One small shallot equals about 4 tablespoons chopped/minced, one medium shallot equals about 3 tablespoons, and one small shallot equals about 2 tablespoons. Thank you for letting us know about the herb substitution.
