I don't know if already cooked peels will dry well for you. If they're too soft for drying, you can try pureeing them in a blender, adding some juice or water, if needed and then drying for fruit leather.
Dried apple peels can be ground or sliced and used when making hot tea, as flavoring in soup, stews, beans, vegetables, desserts, etc.
CINNAMON APPLE POTPOURRI
Don't throw away those apple peels! Break them into small pieces. Dehydrate until tough, about 1 1/2 days. Put in a bag and shake in 2 Tbsp ground cinnamon. Leave overnight. The next day, spread on a baking sheet and bake or 1 hour on lowest oven setting, door open. Makes the nicest smelling potpourri around.
