Just a suggestion. I haven't tried it yet, but I make bagettes all the time. My bagettes get that crusty crunch from a steam filled oven. Put your broiler pan in as you heat up your oven. Right when you are putting the bread in the oven add 1 cup of very hot water to the broiler pan. I will try it tonight and post my results.
