The Russian Piroshki are usually baked.
The Polish Piroshki are basically a noodle dough that is rolled out and cut in circles, and sealed with a filling inside. The piroshki are then boiled in salt water and drained. They can be frozen; freeze on cookie sheet first, then put in freezer container with waxed paper between the layers. Before eating they are fried in butter, and often served with sour cream.

Fillings I'm familiar with are cottage cheese/green onion, mashed potato/cheddar cheese, mashed potato/onion, kapusta (sauerkraut) with onion. I've made them with ground meat/mushrooms. You can make a dessert piroshki with prune filling, cherry pie filling, etc. (The prune filling is a pastry filling sold in the baking section of your grocery store. They also have poppy seed and several other flavor fillings.)
