Hello Connie, I wouldn't give up, maybe try a chicken base for thickness ~ adds wonderful chicken flavor as well. It's funny cause I just had this chili yesterday and thought it was amazing. Soooo much better than mine, I was not only jealous but desperate to find out their secrets as well. Have you thought of calling them? What's the worse that than can do but say no, of couse, which they probably will, but ya never know. Start by calling your local restaurant & then customer service at their headquarters. Compliment them by telling them you have enjoyed it for years, want to make it for company & maybe add the fact that you can't exactly purchase a bucket for take-out for your company. hee, hee. Good luck, don't give up.
