Recipe(tried): Italian Wedding soup

Here is a recipe for adventurous cooks. It is a recipe from my mothers italian kitchen and she passed it on to me - but you'll notice there are no amounts of any of the ingredients. This will surely frustrate some of you, but my mother and great grandma didn't measure anything - they just put a little of this and that until it tasted great! But don't worry, this recipe will work no matter how much or how little you put into it. Good luck!.Put this in the comfort food, good eating category.

step one: cook a whole chicken in a big pot of water with onions, carrots and celery (you can leave the skin on the onions and the stalks on the celery - that will add more flavor) when the chicken is falling off the bone, strain the good broth and keep every drop. Chop up the chicken and put about half away for another use.

step two: find your best meatball recipe (or someone elses) and make mini meatballs about the size of a large marbel. put your meatballs on a cookie tray and cook them all at once in the oven.

step three: put your chicken broth in a large pot with some diced carrots and diced celery (use fresh ones, not the ones taken out of pot before - they taste good to eat ). Add your cooked meatballs and diced chicken. wash and cut up in small pieces some fresh escarole (sort of like lettuce but greener - usually available in summer) and add to your pot. as a final step, find some good mini raviolis ( I like the cheese kind) and add to pot of soup. salt and pepper to taste along with a little sage if availabe.

step four: sprinkle each bowl of soup with some really good parmesan cheese and enjoy!
