Recipe: Claim Jumper's Asian Pear Salad with Citrus Dressing

CLAIM JUMPER ASIAN PEAR SALAD WITH CITRUS DRESSING

SALAD:
2 oz. Field greens (mesculine)
2 oz. Candied Walnuts
2 oz. Citrus Dressing (see recipe below)
1 Asian pear, sliced
1 oz. Bleu Cheese, crumbled
3/4 oz. Julienne red and yellow bell peppers
CITRUS DRESSING:
3 cups soy bean oil
2 cups apple cider vinegar
1 cup corn syrup
3/4 cup honey
3 Tbsp. sugar
1/2 oz. dehydrated onion
2 tsp. fresh garlic
2 tsp. ground black pepper
2 tsp. Kosher salt
2 tsp. dry thyme
1 1/2 tsp. dry tarragon
1/4 tsp. onion powder

Combine ingredients for salad. Toss and serve

Combine all ingredients for dressing and serve.
