Recipe: Barbecue Basting Sauce for Chicken

BARBECUE BASTING SAUCE FOR CHICKEN
Source: Southern Sideboards by Junior League of Jackson, Mississippi

2 cups cider vinegar
1 cup cooking oil
1 teaspoon Tabasco sauce
1/2 teaspoon pepper
1 teaspoon crushed red pepper
1 tablespoon onion powder
1/4 teaspoon liquid garlic
salt

Combine all ingredients in saucepan. Simmer. Basting sauce may be prepared ahead and refrigerated, tightly covered, for up to 1 month.

Makes enough for 8-10 chicken halves

TO PREPARE CHICKEN:
Sprinkle chicken halves lightly with additional salt, place on grill, baste with the sauce after first turning and continue basting frequently until done.
