PORK CHOPS WITH APPLE RAISIN PECAN STUFFING
1 medium tart apple, cored and diced
2 teaspoons butter
1/4 cup raisins
1/4 cup pecans, coarsely chopped
1/8 teaspoon cinnamon
Pinch nutmeg
Pinch allspice
Salt to taste
6 to 8 pork chops or 4 double-pocket chops
Quickly saute apple in butter until apple begins to brown, about 2-3 minutes. Remove from heat and stir together with other ingredients.
Heat oven to 425 degrees F.
Cut an opening in each chop from the rib side, widening the pocket without cutting through to the other side of the chop. Fill pocket of each chop with an equal amount of stuffing, place in a shallow baking dish.
Roast for 20-30 minutes or until internal temperature on a thermometer reads 145 degrees F, allow to rest 5 minutes.
Makes 6-8 servings
Two tablespoons equals one serving.
